Spicy Tuna Tagliatelle


Ingredients:

Tagliatelle pasta

spring onions (white parts)

dried red chillies

garlic

2 cans of tuna

Thai basil leaves



Instructions:

  1. Boil water into a large pan. Add salt. Add the pasta and let it cook. Drain, make sure to leave a little amount of cooking water with it and set aside.

  2. In a frying pan, heat olive oil in medium heat. Add the garlic, chopped spring onion, and dried red chillies.

  3. Stir fry until the garlic is golden brown.

  4. Add the tuna (drained) and 1 cup of Thai basil leaves.

  5. Add the pasta still with little amount of cooking water.

  6. Add salt and pepper to taste.



Lemon and Basil Spaghetti



Ingredients:

spaghetti

lemons

Parmesan cheese

basil leaves

olive oil

ground pepper


Instructions:

  1. In a large pan, boil water (add salt) to cook the pasta. Drain and set aside.

  2. Mix the lemon zest and lemon juice in a bowl along with grated Parmesan cheese.

  3. Add olive oil and whisk until it is creamy.

  4. Add the sauce to the pasta, sprinkle pepper and cut the basil to put on top.

  5. Serve hot and place some lemon wedges on the side for a nice presentation.



Beef Stroganoff Fusilli



Ingredients:

Fusilli pasta

sirloin steak

garlic

mushrooms

beef stock

sour cream


Instructions:

  1. In a large pan, boil water (with salt) and cook the pasta. Drain and set aside.

  2. Cut the sirloin steak into just fine long strips, flavour with salt and pepper.

  3. In a frying pan, heat olive oil in medium heat. Add the sliced beef into the pan, cook for 5 minutes until it is brown. Remove the beef from the pan, place on a plate with paper towel to remove excess oil then set aside.

  4. On the same pan, add minced garlic and sliced mushrooms for 5 minutes. Add 2 cups of beef stock and stir. Let's now put back the beef into the pan, and simmer for 10 minutes.

  5. Stir in the sour cream, and heat through, do not boil.

  6. Serve beside the cooked spiral pasta and garnish with parsley.



Prawn and Green Bean Pesto Fettuccine



Ingredients:

Fettuccine pasta

Green beans

Prawns (peeled)

Italian Seasoning

Basil Pesto

Parmesan cheese (grated)


Instructions:

  1. In a large pan, add water and salt, bring to a boil. Add the pasta until it cooks perfectly.

  2. Before the pasta is fully cooked, add the green beans and let it cook for 1 minute.

  3. Drain both the pasta and green beans and set aside.

  4. In a frying pan, heat the olive oil in high heat. Add the prawns and sprinkle with Italian seasoning, salt and pepper too.

  5. Cook for another 4 minutes then turn off the heat.

  6. Add the prawns to the pan with fettuccine pasta, stir in the basil pesto.

  7. In a large serving plate or bowl, grab a heap of pasta and sprinkle it with grated Parmesan cheese to top it off.






Ingredients:

Fettuccini pasta

Salmon fillets (skin-on)

garlic (crushed)

2 zucchinis

thickened cream

lemon juice


Instructions:

  1. Cook Fettuccini pasta drain and retain a little amount of cooking water.

  2. Season salmon with olive oil, salt and pepper as well

  3. In a frying pan, add the salmon and cook for 4 minutes until the skin is crispy.

  4. Make sure to cook all of the salmon fillets. When ready, transfer to a plate and set aside.

  5. Using the same oil, set the stove in medium heat. Sauté garlic and zucchini for 4 minutes.

  6. Add thickened cream and lemon juice and season with salt and pepper.

  7. Let it simmer for about 5- 7 minutes until it thickens.

  8. Add pasta and cooking water to thin the sauce. Flake in the salmon, add salt and pepper.

  9. Serve it warm and freshly cooked into cute bowls. YUM!
